75cl / 13% - Edi Simcic is one of Slovenia's best winemakers, based in Goriška Brda on the border with Italy. Its Rebula wine, crafted from the indigenous grape of the region, is aromatic and expressive. On the nose, it reveals notes of cooked peach, nutmeg, and allspice, with a delicate hint of marzipan. This versatile white pairs beautifully with white meats, richer fish dishes, or roasted aubergines.
