Here, Aniceto GarcÃa has created a spectacular example of a capón Tobalá, crafted from extra-mature wild agave. Thanks to the maestro palenquero cutting the stalk that would otherwise flower, the agave puts all of its energy into the piña itself rather than growing, for concentrated flavours. Intense, herbal and packed with dry raspberry and fromage frais.
